Using Office 365, but keeping on-site exchange - Why would you?

I am an IT guy, and honestly not the greatest at convincing clients what they should do. We are in talks with signing up a new client who is looking for a cloud solution for accessing and sharing documents from anywhere. Client has about 20 office users and 20 field users with surface pros. We gave them the whole Office 365 demo and they were blown away by it and want to sign up. However, within the last year, their current IT providers had them purchase a new SBS to host exchange in-house. The person who we are in contact with is adamant about keeping their email that way. He's not very tech saavy, so I'm thinking it's either their current IT people who are asking them to keep it this way, or their CFO who is trying to justify their purchase of that server. We are hesitant to move forward with the project as we aren't sure we'll be able to deliver the same quality service/project with them keeping their exchange server in house.

I guess what I'm looking for are some bullet points or an executive summary that I can use to convice them of why they should move their email system to Office 365's hosted exchange.
